Ingredients
30ml Saint Juni Dry Gin
15ml Lemon Juice
15ml Sugar Syrup
2cm Rosemary, picked
90ml Blanc de Blanc, Sparkling Wine
Lemon Zest
EQUIPMENT/GLASSWARE
Champagne Saucer/Coupe or Flute, Cocktail Shaker, cocktail strainer & fine strainer.
INSTRUCTIONS:
Place Saint Juni gin, lemon, sugar syrup and rosemary into the cocktail shaker over ice & shake.
Double strain into glass, top with sparkling wine.
Rub the edge of the glass with the lemon zest. You can choose to either discard the zest or leave it to garnish. We prefer to discard the zest.
