Chill your coupe glass in the freezer.
Make the Honey Syrup by heating the water and cinnamon myrtle (optional). Cool slightly, add the honey and mix well. Place mixture into a glass jar.
(You can use this syrup in your warm drinks like tea and chai too)
Combine all ingredients in an ice-filled cocktail shaker.
Shake and strain into a chilled coupe.
If you would like to garnish, use dried citrus or a citrus zest twist
60ml NEO Gin
15ml Honey Syrup
(1 cup of Walkabout Red Gum Honey, ½ Cup Water, Optional: 5 Cinnamon Myrtle leaves)
30ml Fresh Lemon Juice
Dash of Ginger Bitters
Coupe Glass, Cocktail Shaker, Glass Jar, Strainer
